BKWine Tastes: Exciting natural wines from Edouard Adam, Domaine Mada, in the Languedoc | June 2024

“BKWine Tastes”. It is a collection of wines we have tasted recently. It is often samples that producers have sent us to show us what they do or other bottles that we have come across at tastings or on our tasting table in the office.

Sometimes we come across wines that are both unexpected and exciting. We have tried two wines from a small estate in the Languedoc called Domaine Mada. It is run by Edouard Adam (the property is thus named after himself – backwards) a young and talented winemaker who set up here, near Gignac, in 2017. His wines are undoubtedly natural wines; he works without additives and the wines have a strong personal character.

We received the wines as a gift from a person (not in the wine business at all) who heard about us working with wine and who had a relative who made wine (most people in France have a relative in wine…). He thought we should try the relative’s wine, which of course we were happy to do.

Red, Domaine Mada, Vin de France

Red is made from syrah, de-stemmed and skin-macerated for six days and then aged in barrels. Light in style, with mature notes both in colour and character. Red berry aromas that first made me think of pinot noir. Refreshing and juicy that makes you long for another sip. Delicious.

Substance, Domaine Mada, Vin de France

A direct pressed syrah, thus a rosé (presumably). It feels very natural in style with a low acidity but still great freshness, it is flavourful with ripe red berries, it’s different, very drinkable, juicy and yummy.

An interesting producer with a personal style. We look forward to seeing what he will invent in the future in this under-rated French wine region that goes by the name Languedoc.

We paired the wines with a grilled piece of meat (onglet) with an oven-roasted potato and butter-tossed spring onion for Red and for Substance a pan-fried salmon with couscous with diced vegetables and a light and creamy white wine sauce. Both combinations went extremely well, the latter was also an unexpectedly witty colour matching.
